Grow Garden Grow!

So here's a little tidbit of information about me. I think flower gardening is stupid and a waste of time. I'm sorry to all the flower gardeners out there but I just feel like it's a lot of work just for something to look pretty. Maybe I'll change me mind eventually but for now, I'm just too lazy to do it. That doesn't mean I can't appreciate a nice flower garden. And to be honest, I'm also slightly jealous of nice flower gardens. I also know that it can transform a yard into something beautiful and for this reason, I may have to take it up eventually. But for this summer at least, my gardens are going wild. They have flowers and things growing in them and some people do compliment me on them, but I haven't put an ounce of effort into them. Mayne next summer? I keep saying that once Mia dies, then I might make them nice. It's hard to keep nice gardens with a crazy little puppy barreling through them on a regular basis. I am enjoying the flowers that are popping up in my gardens this spring though and I thought I would share some pictures of what's blooming right now.

So there you have it, my leftover flowers from the previous owners. Not bad, eh? Oh, and did I mention how much I love my new camera? It takes such fabulous pictures!

Okay, so now onto the gardening that I do like. Vegetable gardening! Now this type has a purpose: food. I love that all the work I put into it has a result, and that is yummy tasty veggies on my table and in my freezer come late summer. Oh how happy this makes me! Here are a couple pictures of my cute little veggies just popping through the soil.

Muffin Magic!

Tonight I made muffins. I'm trying to eat better and I needed some good snacks that were easy to grab. And who doesn't love muffins? So I whipped out a recipe and got to baking! I used my personal muffin favourite, handed down through the family. Strawberry Rhubarb Muffins! And a bonus was that I used up some more of my freezer goodies. Now that summer is approaching, I'm trying to empty my freezer of last years fruits and vegetables in preparation for this summer's bounty.

I changed up some of the ingredients though since I am currently off dairy. So instead of normal milk, I used almond milk. I did have to add some more of it since it's a little thicker but overall it worked just fine. I also used canola oil in place of the vegetable oil.

I tried to be creative and snap some pictures of the fruit before it got all chopped up and pathetic looking. But do note that it needs to be smaller for the muffins. Fresh fruit works fine too, I was just using what I had on hand.

You can't really tell from the above picture but I used a mixture of white and whole wheat flour. The recipe just calls for white but I wanted to make them a little healthier so I added in some whole wheat. I'm sure they would also work with all whole wheat but I have yet to try that.

Ready for the oven
The muffin batter is a little thicker but that is normal. Just spoon into a muffin tin and divide the dough evenly between the 12 muffins. Bake at 350 degrees Farenheit for about 15-20 minutes or until done. Let cool and then enjoy.

So that sums up my muffin magic of the day. We've already eaten a few of them... who can resist a warm muffin! Now I'll freeze a few and enjoy them over the next week!

Weight Gain - An Update

So I was looking back over some of my old posts and realized that back in November I had written a post about my weight. I didn't remember writing this post but it was there, stating that I was trying to gain back some pounds. I told you all I would keep you updated. It's only been like what, 6 months? You weren't expecting something sooner were you? Good. Let's get down to it then. ::::drumroll please::::

I haven't gained any weight since then. None. In fact, I've lost weight since my post about it. Depressing eh? I told you all that I was 109 lbs in November and while that was true, it's now May and I'm 107 lbs.
Yes, it makes me want to cry. I can't believe that I haven't gained any weight. I can't believe that it is this hard to gain weight. I can't believe that I'm still 10 pounds shy of my goal. It is all very very sad.
I blame it on the fact that I'm still sick and that nausea plagues me every day and I struggle to eat as much as I should. But you'd think that I would have gained a bit of weight, maybe just a pound or two? Couldn't I at least make it to 110 lbs? My goal is to be back to my pre-sickness weight by the end of 2012 but at the rate I'm going, that's not going to happen.

So there, that's the update on my weight gain (more like weight loss). Sorry to make you wait for so long and not even have good news to share with you. Maybe at my next update (hopefully sooner than six months), I'll have at least gone up on the scales, not down.

Our New "Pets"

On a beautiful sunshine filled day back in April, we picked up our 10 new little pets. Chicks!!!
They were so tiny and so cute and so fuzzy. We spent the next couple of hours playing with them and introducing them to Mia. She was a little concerned at first but she soon warmed up to them.
This is our first time having chicks and we were a little scared of killing them off within the first few days. Other than a small incident with the heat lamp and the shavings, we haven't killed them yet! It's been a full month and we still have 10 little chicks. Well, they aren't so little anymore.

So there, those are the newest members of our household. But come August we'll be done five... but we'll be eating five delicious chicken dinners this winter!

The Beginning of New Things

Thanks to some encouragement from a friend of mine, I have decided to change up my blog a little bit.


I know I know, how will you live without the constant griping and depressing posts? Don't worry, there will still be a few of those. But in order to mix it up a little bit and keep my followers somewhat entertained, I have decided to add in some happier posts. I will continue with my random rantings and my thankful posts but I will also be sharing some "life" stuff with you. Maybe some of my DIY projects and gardening adventures and just some overall happenings from our life. I hope you will enjoy it and will get over your shock.

Spring is in the air!

I love spring. It is by far my favourite season. I think it has something to do with how happy it is to see new life after a long winter. I love the flowers and the baby green leaves and the ferns and the blossoms and the warm weather and the fresh smell of everything. I just love it all so much and it cheers me up and brings a smile to my face. I'm trying really hard not to add "spring" to my thankful list each day since I do want it to be different and not repetitive. And it teaches me to find new things each day to be thankful for. I've also decided that I won't be posting everyday as that gets a little too time consuming and I don't always have the opportunity to sit down and write a blog post. So I'll be keeping my list on piece of paper and then every few days adding it here.

Another happy things is that I've been feeling half decent lately. I'm not sure if it's a coincidence or if the supplements and dairy-free are actually working but I'll take it! I've had 3 days this week that I've felt almost normal. It's been wonderful! I'm so so so happy about this and am hopeful that it means I'm actually healing and I might be kicking this bug or whatever it is. So yes, happy update there.
