Chocolate Avocado Pudding

As I'm sure I've mentioned before, I am completely gluten-free and mostly dairy-free. As for the dairy, I'm not convinced that it is actually doing anything so I'm slowly adding some stuff back in. For example, I'm eating butter again. I just love butter so much and I haven't noticed myself feeling any worse since adding it back in.

But as for other dairy products, I'm still finding substitutes. So when I came across this recipe for Chocolate Pudding, I thought it was worth a try.

The recipe calls for avocados. Weird I know, but a lot of recipes sneak avocados into them without anyone noticing so I wanted to try it too.

I pulled out my handy dandy food processor and got to work. First, you slice your avocado and scoop out the insides.

Then, you add the other ingredients.

I used almond milk instead of coconut milk. I'm sure you could use whatever type of milk you wanted.

Once all the ingredients were in the food processor, I pulsed them until smooth, being sure to scrape down the sides halfway through. After it was nicely combined, I tasted it to see if it needed anything else. I added more cocoa and honey and then mixed again.

It made a really nice smooth creamy pudding.

But to be honest, I didn't like it. It tasted too much like avocado for me and after a few bites I was sick of it. I didn't add in the orange zest (because I didn't have any) and I'm wondering if that would have helped disguise the avocado flavour more.

All in all, I kind of considered this a fail. I didn't finish all the pudding and ended up throwing it away.

Have you ever made something that sounded half decent but didn't turn out so great? Do you sneak avocados into anything? Have you ever made a pudding like this?

  2. Casey, I'm glad I'm not the only one who is in love with avocados. I might try a banana next but I'm wondering if the flavour might be too powerful? I guess I'll just have to try it!

  3. I made chocolate chip cookies once with Orange juice! (I guess instead of milk? I might be remembering slightly wrong - I was probably 6-7 years old at the time. lol)

  4. Kate, you make me chuckle. I love how you "think" you made chocolate chip cookies with orange juice! But still, that's pretty cool.

  5. I've never made anything with avocados except guacamole :) But I do LOVE that! Oh and kale salad with smashed avocados and lemon juice instead of salad dress is awesome. If you like avocados.

I bet the orange zest would have helped the flavor a lot. Maybe you should try the recipe again with that. Citrus really mellows out the avocado.

  6. Erin, that salad sounds pretty good! I'm trying to learn to like avocados more so I may have to give it a try.

And thanks for the tip about the orange zest, maybe I'll give this recipe another try. If I do, I'll be sure to update you. :)
