Roast Beast

I love my crockpot. It really is such an awesome invention and makes cooking so much easier, especially if you work all day long. There is nothing better than coming home to a hot meal all ready to be eaten with minimal work involved. Ah, the crockpot.

I probably don't use the crockpot as much as I could but I do have a few old faithful recipes that I love to make in it. One of them being this amazing Balsamic Roast Beef recipe that I came across on Pinterest a couple months back. It is easy to make and tastes amazing, a must try. Seriously. Go home and make yourself this roast beef.

One thing that I love about this recipe is that I always have all the ingredients needed. Most of them within arms reach, like my garlic and balsamic vinegar.


Instead of canned beef broth, I use this concentrated version of it. It's called Better Than Bouillon Beef Base and I love it. You buy this little jar of it and it keeps in the fridge for a long time. You then mix a teaspoon of the base into 1 cup of boiling water and voila, beef broth! Easy peasy.


The pictures of this meal kind of suck since I'm always in a rush in the mornings to get the meal in the crockpot and then usually by night time I'm just too hungry to be bothered with pictures. But I did try and snap a few of this amazing roast beef.


It's so moist and tender and full of flavour. I like to serve it with garlic mashed potatoes, green beans and corn. So good!

  3. Mrs. Lopez - Using the crockpot is definitely a learning experience but once you start you will love it! Let me know how the beef turns out for you.

    Kate - Yum to chicken noodle soup! I never think of making soup in the crockpot.

  4. We love our crockpot, though like you, we don't use it as much as we could. I make a Thai Chicken noodle soup in it every once in awhile. (Instead of straight chicken stock, you mix peanut butter and tomatoes into the stock. It has bean sprouts and bell peppers, too. Last is the rice noodles that you add ten minutes before you want to eat.) Yum!

  5. As soon as the cooler weather comes, out comes my crockpot/slowcooker! I absolutely love that feeling of coming in at the end of the day and knowing that there's a whole meal waiting that i don't have to think about. I tend to make casseroles that contain lots of vegetables in with the meat - that means that I just need some crusty bread or some rice or noodles and the whole meal is done. I use it for everything from soups to desserts!

    Anne - I really need to use my crockpot more, those casseroles you described sound so good and are making me hungry! And I've never tried a dessert in the crockpot, I just never think of it.
