A couple weeks back a friend of mine sent me the link to a gluten-free dairy-free Lasagna Soup recipe. It looked really good and I decided that once our beef was delivered (more on that tomorrow), I would make this soup.
So earlier this week, I pulled out the crockpot and made me some hearty soup.
The only change I made to the recipe was not adding the V-8 juice. I didn't have any on hand and the pot was full enough without it.
It smelled so good while I put it all together in the morning and I thought about it all day while I was at work. Let's just say, I wasn't disappointed.
I picked up a loaf of gluten-free dairy-free bread from a local bakery and it was a fabulous addition to the meal. I dipped it in the tasty soup and boy was it good!
The flavours melded together perfectly and it was nice and thick. My kind of soup. Totally will be making this recipe again sometime soon. I highly recommend you give this soup a try. And if you don't have any dietary restrictions, you could just use regular noodles and then sprinkle some cheese in your bowl once it was served. I bet you that would be great!
