GF: Chicken Sweet Potato Stir-Fry - New Recipe #4

So remember my post about Rosemary Quinoa Meatballs where I told you all about my new goal of learning to like quinoa? Well, so far so good.

I found this amazing sounding recipe on Pinterest for Chicken Sweet Potato Stir-Fry. It looked easy to make, nice and colourful and used quinoa! It was a win-win-win.

It was to die for. Honestly. Just thinking about it again is making me drool and dream about the next time I will be making it. I think I need to pick up some chicken and add it to my menu plan soon.

I made a couple minor adjustments to it, but I was pleased with how it turned out. I used leftover chicken from a roast chicken I made, eliminated the jalapeno pepper and put half a yellow pepper in its place and didn't add the cilantro (since I didn't have any). But it still ended up tasting amazing!


I loved how it had the ease of a stir-fry but was so different from my normal one I make. I'm glad I added in the yellow pepper, it helped change up the colours in it.


The finished product was a big hit with both me and Dan, so it's definitely going into the recipe book to make again.


I think my favourite part was the rainbow of colourful veggies in it. Don't you just want to take a bite of it?
