GF & DF: Blueberry Lemon Breakfast Bars

A couple weeks back, my brother, his wife and their adorable 5 month old daughter came for a visit. It was a quick visit, with them arriving around 5:30pm Friday night and leaving by 9:00am the next morning, but it was still fun to hang out with them and enjoy the cuteness of our newest niece. Seriously, she's basically the cutest thing ever.

My sister-in-law Tara has a ton of food allergies and normally has to bring all her food with her when travelling and going to people's houses. I have lately discovered how exhausting this can get and how nice it is to be able to eat what someone serves you.

So when I heard they were coming, I was determined to make foods that she and I could both eat and enjoy. I headed off to Pinterest, my go to recipe site, and searched for something that looked good and fit into the "safe food" category.

I just happened to stumble across these amazing looking Blueberry Lemon Breakfast Bars from the blog Real Sustenance. Can we say heavenly? I was basically drooling just looking at the pictures on her blog. I knew I had to make them.

But first, I had to double check with Tara to make sure she could actually eat all the ingredients. The only no-no was the baking powder which is pretty easy to substitute, so I discovered from her. Just use baking soda and put half of what the recipe calls for.

It worked out just fine. They were nice and tasty, even if they didn't look like the pictures on the blog. Why is that? Why do things never look as good as the recipe shows? Oh well.

It was my first time cooking with almond flour and I think it was a decent first experience. Although I should have pressed the bars down into the pan a little more, they were more crumbly than desired.

Even if they weren't perfect, the four of us devoured them for breakfast and felt quite satisfied. Well, the men had eggs with their breakfast bars, since they have such hearty appetites. There was even one piece leftover so I could send it with Tara as a mid-morning snack. Win.

Gluten-free baking can be hard but also rewarding. It's more challenging but fun. And I've made some pretty good food over the last five months.

(Oh, and in case you're wondering, I made up a yummy stir-fry for them for supper, since it's pretty allergy friendly. It was also delicious.)

  2. Erin - Thanks! I just know how much I appreciate it when people make the effort to have food I can eat, so I tried to do it for her. Plus, now that I'm gluten and dairy free, it's not that hard!
