Foodie Friday - Black Bean Brownie Cookies

Doesn't the name of these cookies just make you want to eat them all? Not so much? How about the picture of these cookies?


I was a little hesitant to make them, since the main ingredient was black beans, but I had heard good things about them and they were a healthier option than my Betty Crocker mix. So I pulled up the recipe and got to work.


It was a simple recipe with just a few ingredients and you mix them all in the food processor. Jackie, it would probably work in the blender. ;)

Since the original recipe isn't gluten/dairy free, I just altered it a bit by using almond milk and my own GF flour mix.


Oh, and to make it a teensy bit healthier, I used coconut sugar instead of normal white sugar. It worked well and made me feel better about my sugar intake.

Once everything was nicely mixed together, I added in the chocolate chips and then scooped out 16 small cookies onto a cookie sheet lined with parchment paper.



My finished product cookie didn't look anything like the original picture, but they still tasted pretty awesome. Although I did discover that they are much better chilled than warm. In fact, don't even bother eating them warm.


These cookies keep well in the fridge for up to a week and they have a nice fudge like texture to them. While I probably won't be making them too often, I consider them a success!

Anyone else ever made any "special ingredient" desserts? I usually don't tell people what is in them in case it will turn them off from trying them. Is that bad of me?

  1. They look good to me! I once made sweet potato brownies and they were so yummy and you couldnt taste the sweet potatoes at all- but then I told my brother the secret ingredient and now none of them trust my baking!!!

  5. Interesting? Are the chocolatey enough for me do you think?
    The only special ingredient desserts I've made are sweet potato blondies and blueberry chocolate cake.

  6. Jackie - I found them very rich and chocolatey so I think you'd like them. You could always add more chocolate if you really wanted! You should share that blueberry chocolate cake with me, I want to give it a try.
