Foodie Friday - Rosemary Garlic Beef Stew

It's that time of the year again, when the crockpot comes out and stews, soups and casseroles make a more frequent appearance at the dinner table. The colder weather and shorter days just make you want to eat comfort foods. At least that's the way it is for me. With the time change last weekend, it seemed like the perfect time to try out a new beef stew recipe.

Oh and it's also the time of year for crappy pictures again. My camera does best with natural light and I have yet to successfully take nice pictures in all the fake kitchen lighting. Maybe that is something I should try and work on this year.

Anyways, back to the stew. Remember last week when I mentioned my favourite food blog, Budget Bytes? Well this recipe is from there too. I just can't help it, her recipes are all so good! But for this particular one, she had me at garlic. Anything with garlic in it is good so I knew that this stew was worth at least one try.

This recipe is done in the crockpot but takes a little more work than your average crockpot meal. You chop up the veggies and throw them in without much prep but you need to brown your meat and make the sauce.

Before browning the meat though, you coat it in flour. Which is super smart because it gets the flour into your stew but doesn't involve mixing it in at the end for thickening. So it kind of skips a step.

As for the sauce, it's really simple too but adds awesome flavour to your dish. Mixing it up in the pan you browned the meat in keeps the flavours from that while adding in new ones.

My favourite part of this stew recipe is the secret ingredient: dijon mustard. So good! It gives the stew the little kick that it needs to put it over the top. So so good.

I am so glad that I gave this recipe a try and it will most definitely be going on my "to make again" list.

We served ours over rice in order to stretch it a bit farther and get more meals out of it. But I'm sure it would be just as good on its own.
