Foodie Friday - Strawberry Rhubarb Muffins

I shared this recipe with you guys back in 2012 but I doubt many of you remember. Plus, it's my favourite recipe ever so I figured it was worth a re-share. Muffins are my go to snack and I pretty much always have some in my freezer, ready at a moments notice. If I don't have any in my freezer, it's a pretty big dilemma and I need to make some right away.


Earlier this week I ran out of my muffin stash so I quickly got to making up a new batch. And since I have so many strawberries and rhubarb in my freezer, I figured I'd make more of these delicious muffins.


I really like these muffins not only for their awesome taste but for the simplicity of the recipe. It doesn't take long to whip some up and a single recipe only makes 12 muffins, so you also don't need to be baking them for ever.



They are also really easy to make safe for me to eat. I only need to replace the milk, flour and baking powder, which I always have on hand and easy to grab.

Once the batter is mixed up, throw some muffins liners into a muffin tin and you're ready to go.


Then once they are out of the oven and cooled enough to touch, taste the perfection! I tend to eat too many that first day but they are just so dang good. Trust me on this.

Now for the recipe.

Strawberry Rhubarb Muffins
 1/3 c. vegetable oil
1/2 c. sugar
1 egg
1/3 c. milk 
3/4 c. minced rhubarb
1/2 c. sliced strawberries
1 3/4 c. flour
2 1/2 tsp. baking powder
3/4 tsp. salt

Mix oil, sugar and egg together, then add in milk. Add in rhubarb and strawberries until lightly mixed. 

Mix drys together in separate bowl, add to wets and stir until just moistened. 

Bake in oven at 350 degrees Fahrenheit for 15 minutes or until done. Cool on wire rack. Makes 12 muffins.
